Ingredients

For the Crust

  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 large egg yolk
  • 1/2 cup all-purpose flour
  • Pinch of salt
  • 1/4 cup mashed ripe banana
  • 1 teaspoon vanilla extract

For the Cheesecake

  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 package cream cheese, room temperature
  • 1 can sweetened condensed milk
  • 150 grams mashed banana
  • 1 teaspoon vanilla extract

For Garnishing (Optional)

  • Wafers
  • Banana slices

Instructions

1. Prepare the Crust

Preheat the oven to 350°F (180°C) and line a 20x20 cm (8x8 inch) baking pan with parchment paper. In a large bowl, whisk together melted butter and brown sugar until fully combined. Add the egg yolk, flour, salt, mashed banana, and vanilla extract, then mix until smooth. Transfer the mixture to the prepared baking pan and bake for 15-20 minutes. Remove from the oven, let it cool to room temperature, and set aside.

2. Prepare the Cheesecake

In a bowl, using an electric mixer, beat the heavy cream until soft peaks form. Gradually add the powdered sugar, then refrigerate. In another bowl, beat the cream cheese until smooth, then gradually mix in the sweetened condensed milk, mashed banana, and vanilla extract until fully incorporated.

3. Assemble and Chill

Pour the cheesecake mixture over the cooled crust, spreading it evenly. Refrigerate for at least 3 hours or until fully set. Once firm, remove from the fridge, cut into bars, and garnish with banana slices or wafers if desired. Enjoy!
