Ingredients

Espresso Martini Gelée

  • ¼ cup cold water
  • 2 tsp unflavored gelatin
  • 2 tbsp light brown sugar
  • ¾ cup hot brewed espresso
  • 2 tbsp vodka (or water for alcohol-free)

Espresso Chocolate Mousse

  • 2 tsp espresso powder
  • 2 tbsp hot water
  • 6 oz semisweet chocolate (finely chopped)
  • 1 cup heavy cream (divided)

Whipped Cream & Garnish

  • ¾ cup heavy whipping cream
  • Roasted coffee beans
  • Dusting of espresso powder
  • Optional leaf-shaped tuile cookies


Instructions

Step 1 – Prepare Gelée

Bloom gelatin in cold water for 5–10 minutes. Stir brown sugar into hot espresso. Add gelatin and stir until dissolved. Mix in vodka or water. Pour into serving glasses and refrigerate for 3 hours until set.

Step 2 – Make Mousse

Dissolve espresso powder in hot water. Heat half the cream until steaming and pour it over the chocolate. Stir until smooth. Add espresso mixture and cool slightly. Whip remaining cream to stiff peaks and gently fold into ganache.

Step 3 – Assemble

Pipe or spoon mousse over set gelée. Chill 30–45 minutes. Top with freshly whipped cream, coffee beans, and a dusting of espresso powder.
